Senior production chefs strive to consistently produce meals to perfection according to predetermined specifications. They have the ability to work independently and lead a team in often hot and highly challenging kitchen environments.

Production chefs and their teams work quickly and efficiently, producing food often in high volumes day after day, requiring energy, highly methodical organisational skills and attention to detail. In a real working environment, you learn and hone your skills as a Senior Chef with one-to-one support from a specialist trainer and workplace mentor, all while earning a wage.

Subjects covered include:

  • Producing high volume meals to a specific brand standard, leading and mentoring a team to ensure the highest levels of customer satisfaction
  • Learning how to control stock and manage budgets to ensure profit margins are met
  • Leading the brand image and standard in the workplace

Assessment Methods

There will be continual assessment in the workplace and optional College workshops to develop a recipe evidence log showing your development across the culinary range and culinary knowledge. There are three assessment exams at the end of the course made up of a multiple choice test, four hour practical observation in the workplace and one hour professional discussion.

Progression Options

On successful completion of this apprenticeship, you could find employment in a kitchen or catering manager role.

Entry Requirements

You need to have completed the Level 2 Commis Chef Apprenticeship or a similar Level 2 qualification and attend an interview. A grade 4 or above is required in English and Maths GCSE, you are also required to complete an initial English and Maths assessment (Century) to a minimum of level 1 standard.
